Sevruga Caspian Caviar Acipenser stellatus Living for only 30 years this sturgeon creates an intensely dark, almost luminous, small caviar with a strong yet delicate taste. This fish, which grows to weigh about 80 pounds, is the smallest and most abundant of all the Caspian Sea Sturgeons.
