Vanilla has been imported from Mexico to Madagascar which is nowadays the first vanilla producer in the world. This incredible fruit of the orchid family is renown for its distinctive flavour. The food industry uses a large percentage of the world's vanilla in ice creams, yogurt fresh and frozen, and other flavoured desserts. Despite all the wonderful products available in such market places, most customers opt for vanilla. Because vanilla is in such high demand, and because it's so expensive, synthetics are often used instead of natural vanilla. In fact, 97% of vanilla used as a flavour and fragrance is synthetic.
